1、FT Making dumplings 包饺子一、包饺子 Making DumplingsDumplings are the most symbolized Chinese food for Chinese New Year.While you can buy premade dumplings at the grocery store,making yourown dumplings at home is a quite rewarding family activities during theholiday,you can create beautiful,homemade dumpli
2、ngs to impress yourfamily and friends.(一)Ingredients1.wrappers4 cups all-purpose flour2 cups water1/3 teaspoon salt2.filling1/2 cup chopped shrimp2 cups Napa cabbage1 teaspoon ginger1 tablespoon green onion1.5 teaspoon salt2 tablespoons soy sauce2 tablespoons cooking wine1/3 teaspoon white pepper1 t
3、ablespoon sesame oil1 tablespoon vegetable oil(二)Making the Wrappers1.Mix the flour,salt,and water in a large bowl.Mix the ingredientstogether until you make a nice,smooth dough.Use a wooden spoon to stirthe ingredients together until they are fully incorporated.This recipe shouldmake about 20 wrapp
4、ers.2.Let the dough rest for 10 minutes.This can help the ingredients settletogether.As you wait for the dough to rest,you can cover the bowl with clingwrap.You can start to make the filling for the dumplings while you wait.3.Place the dough on a flat surface.A cutting board will work here.Then,cut
5、the dough into about 20 or more equal pieces for thedumplings.4.Make each circular wrapper.Before rolling out your dumpling wrappers,dust your workingsurface again.Take one piece of dough and press it to a round disc.5.Hold the wrapper with your left hand and hold the rolling pinwith right hand.Rota
6、te the wrapper when moving your rolling pin.Repeat the process,rotate the wrapper-roll and rotate the wrapper-roll.The wrappers will have thicker center and thinner edges naturally.Thewrapper should be around 8cm to 10cm in diameter.(三)Making the Filling1.Shred the cabbage and put into a stainless p
7、ot.If youd like to beextra thorough,then you can add a dash of salt to the cabbage and let itsit in a bowl for 10 minutes;this will allow the salt to soak up the excessmoisture in the dumplings.2.Mix the cabbage and minced meat together by hand.Groundmeat is meat finely chopped by a meat grinder.The
8、 process of mincing isusually done manually.Continue mixing the cabbage and meat togetheruntil they are thoroughly blended.Pork and lamb are generally preferredfor Chinese dumplings,but beef and chicken may be used as well.3.Add the remaining filling ingredients to the bowl and mix again.Repeat the
9、process until youve thoroughly mixed in the remainingingredients.If youd rather use mixing spoons instead of your hands,thatwill work too,but you have to be really thorough.4.Massage the cabbage mixture with your hand for 10 minutes.This will help dry out the mixture a bit.While you massage the mixt
10、ure,ifyou feel that there is not enough vegetable oil,then you should addmore.5.Scoop the filling onto each wrapper.Just use a spoon to scoopout 1-2 tablespoons of the mixture in the center of every wrapper.Youdont have to use the exact same amount in every wrapper;just makesure you have enough to u
11、se for all 20 or so of the wrappers.6.Fold the sides of the wrapper together.You should wet the edgeof each wrapper with a damp finger and then fold the sides together,crimping(pressing together)the dough with your fingers to seal thecontents inside.To do this,first fold it in half and press togethe
12、r the topof the edge.Then press each side together,while crimping it.7.Place the wrapped dumplings on a floured surface.This willkeep them from sticking to the surface and will make your dumplingsready to either boil or fryits your choice!(四)Boiling the Dumplings1.Put the dumplings in boiling water.
13、To make sure that they are thoroughly cooked,one method used inChina is the 3 boil method.To do this,add the dumplings to boilingwater,and return the water to a boil.Then,add 1 or 2 cups of water(itcan be cold or at room temperature).Wait for it to boil the second time,then add water again.After the
14、 water boils the third time,yourdumplings should be good to go.2.Transfer the dumplings carefully from the pot to a plate.Youcan use a slotted spoon to take out the dumplings or close the lid overthe pot and pour out the water before removing the dumplings.3.Serve.Serve these tasty dumplings while t
15、heyre warm.You canenjoy them with a dipping sauce of your choice.(五)Frying the Dumplings1.Heat cooking oil in a medium-sized pan over medium heat.Youshould cook about 8 dumplings at a time if the size of the pan allows it.Once the oil heats up,you should place the first 8 dumplings on the panwhile t
16、rying to move them apart enough so that they dont sticktogether.2.Fry the dumplings for 2-3 minutes until their bottoms are lightbrown.3.Add some oil to the pan and fry the dumplings until they arecrispy with golden brown bottoms.Once youve finished frying thesedumplings,remove them from the pan and
17、 place them on a plate with apaper towel on it to absorb the excess oil.You can also remove thedumplings with a slotted spoon and shake the extra oil back into thepan.4.Cook the remaining dumplings.Then,cook the remaining 12 orso dumplings in two batches.Do exactly what you did with the previousbatc
18、h of dumplings,adding more oil when necessary.5.Serve.Serve the dumplings while theyre warm with your favoritedipping sauce.二、包饺子 Making Dumplings(公号资料)(一)和面:Preparing the Dough1.宝宝们,咱们先和面。和面要用到面粉和水。Babies,lets start by preparing the dough.We will be usingflour and water to make the dough.2.先把一些面粉倒在
19、盆里,一边把水慢慢倒进面粉里,一边搅拌面粉。Pour the flour into a large mixing bowl bul.Stir the flour asyou slowly add water.注:英语里会按用途来区分各种器皿,比如搅拌用的碗叫 Mixing Bowl,上菜用的盘子叫 Serving Plate。3.当面粉变成面疙瘩的时候,我们就可以下手和面了。When the flour starts to cake,its time for us to use our handsto work on the dough.4.和面时,一只手握住盆的边缘,另一只手用力揉面,揉到面
20、团表面光滑为止。当盆和手都很干净不沾黏时,面就和好了。Holdthebowlwithonehandandusetheotherhandto knead the dough until it becomes smooth.The dough is readywhen the bowl and your hands are clean and no longer sticky.5.把面放在盆里醒一会儿,注意要用锅盖把盆盖起来,不然面会变干的。Putthedoughintoa bowlandletitstandfora while.Remember to cover the bowl with a
21、lid,otherwise the dough willbecome dry.(二)擀皮:Making the Dumpling Wrappers/Skin1.宝贝,该做饺子皮了。首先,我们把案板清理干净,在上面撒一些面粉,这样面就不会粘在案板上了。Sweetheart,its time to make the dumpling wrappers.First ofall,weneedtocleanthecutting/choppingboardandthensprinklesomeflouronit.Thismakessurethedoughwont stick onto the choppi
22、ng board.2.现在,我们拿出和好的面,用刀把它切成两半,取出一半放在案板上。Now,lets take out the dough that we prepared earlier.Use aknife to cut the dough in half and place one of the halves on thechopping board.3.用手把面揉搓成一个长条,注意要保持粗细均匀。Kneadandrollthedoughintoalongstrip.Makesurethe thickness is even.4.然后,用刀把长条切成长度均匀的小段。Next,cut th
23、e dough into even slices with a knife.5.切好之后,在小面块上撒一些面粉,然后把小面块们放到案板一侧。After that,dust some flour on the small slices of dough and putthem to one end ofthe chopping board.6.拿一个小面块放在案板中央,用手把它按扁。用擀面杖把它擀成圆形的薄片。最好让边儿比中间薄,这样之后包起来更方便。Put one of the cut dough slices in the center of the choppingboard.Push/p
24、ress it flat with one hand.Roll it out into a thinwrapper with a rolling pin.Youd better make the edge thinner thanthe center,which will come in handy at later stages.7.用相同的方法处理其他的小面块。注意每张饺子皮两面都要沾上补面,这样它们才不会粘在一起。Repeat with other dough slices.Make sure both sides of thewrapper are dusted with flour
25、so that they wont stick together.(三)包饺子:Making Dumplings1.小家伙们,我们终于可以开始包了。拿一张饺子皮,放在手里,手心弯曲成小碗的形状。Little buddy,we are finally ready to make dumplings.Take awrapper and put it in one hand.Cup your hand into the shape of asmall bowl.2.用勺子取一点儿馅儿放在饺子皮中央,轻轻压实,把馅儿固定住。Scoop some filling and put it in the ce
26、nter of the wrapper.Pressit down gently to make sure the filling stays in the center.3.把饺子皮对折,先把正中间捏在一起固定住,然后从饺子的一端捏到另一端。Fold the wrapper in half and pinch the middle together.Thenpinch from one end to the other.4.把包好的饺子放在撒有补面的案板上。用相同的方法处理剩下的面和馅。Place the dumplings on the floured chopping board.Repe
27、atwith the remaining dough and filling.(四)煮饺子:Cooking Dumplings1.小朋友,咱们终于可以煮饺子了。拿一个大锅,接半锅水。Kid,wearefinallyreadytocookthedumplings.Usea large pot and fill it half full with water.2.把锅放在灶上,拧开火,开始烧水。Put the pot on the stove,turn on the gas and bring it to a boil.3.水开了冒泡泡的时候,就可以把饺子下进去了。注意一次不要下太多,可以分几次来
28、煮。When the water boils and bubbles break on the surface,we canput in the dumplings.Be careful and don t put in too many at a time.We can cook them in several batches.4.饺子下水后,要马上开始用勺的背面搅拌,使饺子在水中转动。As soon as the dumplings go into the water,we need to stir withthebacksideoftheladleimmediately.Thiswill
29、makethedumplings swirl in the water.5.水开了,马上要溢出来时,我们可以往锅里加一些凉水,并继续搅动。煮饺子的时候一般沸腾三次就可以了。俗话说,三开饺子两开面。When the boiling water is about to overflow,we could add somecold water and continue to stir.Usually,the dumplings are fullycookedafterthreeboils.Therulesays:boilthreetimesfordumplings and two times for noodles.6.当所有饺子都漂在水面上时,就说明饺子煮熟了。开饭啦!When all the dumplings are floating on the water,it means theyare fully cooked.Dinner time!
