1、食品质量与安全专业本科培养方案Undergraduate Program for Specialty in FoodQuality and Safety一、培养目标I Educational Objectives本专业培养具有化学、生物学、食品科学、安全评价、管理学的基本理论和技能,能在 食品生产、流通和消费领域内从事食品及其原辅料的监督检验、安全评价、质量管理、科学 研究、开发与设计等方面和食品质量与安全相关的有创新精神和实践能力的应用型高级专门 人才。This specialty aims at cultrivating application-oriented high-level sp

2、ecialized talents with initiative spirit and practical ability.Students of our specialty will master some basic theories and skills of chemistry, biology,food science, safety evaluation and administration so that they are able to undertake various jobs as supervising,inspection, safety evaluation, q

3、uality management,scientific research and design in the fields of food production,circulation and consumption, etc.二、培养要求II Skills Profile本专业主要学习化学、生物学、食品科学、食品质量控制与安全评价的基础理论,接受 二十一世纪食品工程师的基本训练,具有在食品行业领域内从事食品及其原辅料的监督检 验、安全评价、质量管理、科学研究、产品开发与设计等方面的基本能力。毕业生应获得以下几方面的知识和能力:1 .掌握食品质量与安全相关的化学、物理和生物学科的基本理论和基

4、本技能;2 .较系统地掌握本专业领域宽广的技术理论基础知识和基本技能,主要包括生物化学、 微生物学、食品营养学、食品毒理学及安全性评价、食品检验技术、食品生产工艺与设计、 仪器分析、计算机原理及控制、食品质量管理等基础知识;.熟悉国内外的食品质量标准、贸易政策和卫生法规;3 . 了解食品质品与安全的发展动态,掌握其评价程序和测控手段;4 .掌握文献检索、资料查询和收集运用的基本方法,具备科学研究的基本素质和实践 技能。熟练掌握一门外语。Students of this specialty will! manily study the basic theories of chemistry,bi

5、ologyjbod science, food quality control& safety evaluation, accept basic discipline of food engineer in 21th century.and have basic abilities of supervision,inspection,safety evaluation.quality control,scientific research, exploitation and designing in food production.circulation,and consuming field

6、.Graduates of this specialty are expected to possess the following knowledge and capabilities:1 .Mastering basic theories and skills of chemistry, physics and biological disciplines which are related to food quality and safety;2 .Mastering technical theoretic base and basic skills of the specialty,w

7、hich mainly includes (he basic konwledge of biochemistry,microbiology,food nutriology.food toxicology&security evalution,food inspection technology,food production technics and design, apparatus analysis,computer principle &control.food quality control etc:3 .Being familiar with both at home and abr

8、oad standards for food quality, trading policy and sanitation code;4 .Understanding development trends of food quality and safety.Mastering methods of evaluating program and measuring & control method of food quality and safety;.Mastering the basic methods of document-indexing and data-cnqurryring,a

9、s well as skills of applying these matcnials, possessing basic qualities of ding scientific research.Master a foreign language skillfully.三、专业特点IllSpeciality Characteristics本专业主要培养能从事食品卫生质量与安全的监督、检验、管理等工作的高级技术人才。 学生毕业后可在各类食品及农产品加工企业、海关、商检、工商、动检、环保、技术监督局、 食品监督检验所、卫生防疫站、食品药品监督检验等部门工作,也可以到科研院所、大专院 校从事科

10、研和教学工作。The objectives of this speciality is to cultivate advaccd application-type technical personnel who are able to undertake tasks like supervising,inspection and administration on food sanitation ,quality,amd safety areas. Graduates will be able to work on various food production enperprises,cus

11、toms, commodity inspection bureauindustial&commercial bureau,bureau of animal inspection, enviroment protection bureau, technical supervision bureau, food inspection station, epidemic prevention station,food &drug inspection department etc. They can also undertake scientific research and instruction
