1、优秀酒店季度工作总结今年,酒店行业环境相当严峻,为搞好经营,饭店在去年年底就制定了正确的经营思路,把经济指标分解到各个部门,核定了营业额、费用额、毛利率、逐月核算,超额提成,节能有奖的效益与工资挂钩的原则,充分调动了管理人员和员工的积极主动性,通过酒店上下的齐心努力,想方设法,搞好经营。虽然大的环境不景气,但酒店还是取得了较好的经济效益和社会效益。2017 年第一季度累计完成营业额为:00000 万元,比去年同期上升了000 万元,上升率为 000%,完成了预期指标的000%。二、各部门工作情况总结餐饮部:强化各项管理制度,提高服务质量,更换新菜谱,不断调整开发餐饮新品,突破餐饮营收。餐饮部第
2、一季度完成销售000 万元,比去年上升000 万元,上升率为 000%。在年初,餐饮前厅和后厨紧密配合,顺利的完成了春节前的礼包销售、会议包桌接待高峰,以及春节期间的团圆宴接待工作。针对节后员工流动较快,新员工较多的情况,加大了培训力度,力争尽快使员工服务技能到位;编制下发了预定电话订餐的流程和快捷点菜菜单,同时对预定员工进行了菜单的培训;根据饭店调整,成立预订处,并提高员工的工资待遇;后厨积极调整菜品,三月初制作了临时性的新菜单、燕鲍翅菜单并对服务员做了菜品知识培训后投入使用;为加强各区域的管理力度,从优秀员工里选拔若干领班协助个区域主管做好服务工作;奖金分配、海鲜提成制度进一步做了调整了,

26、通过登门拜访、电话等方式对新密市场、洛阳旅行社市场进行了宣传工作。逢节假日,向关系户电话问候,发送短信,以不同的形式征求宾客的宝贵意见。特别是对现有协议客户的维护和管理方面,通过对客户档案资料的整理后,每周销售人员定期对客户进行拜访,一方面加强联系,另一方面及时掌握客人反馈信息和客户的消费动态,提高协议单位消费有效率。工程部:全面落实节能措施,有效减少酒店费用。做好日常维修与保养,确保酒店设备正常运行。工程部在第一季度先后对中央空调主机、冷却塔、冷冻水循环系统进行清洗,更换有故障的阀门4 台、保温 100 余米,对隐蔽的空调风机滤网清洗、客房卫生间感应设施及上下水的排查、客房的隔音改造、后餐包
